"Can serve with rice if you wish they are using bone in chicken breasts but you could use legs and thighs they are cheaper just cook until they don't bleed when pierced .Irish grocery store They used less cooking time but I like my chicken well done ,if you don't cook less time."

Step by Step Method

Step 1

Heat the oil in a large frying pan set over a medium heat.

Step 2

Season chicken lightly with salt and pepper

Step 3

Add the chicken and onion to oil.

Cook for 15 minutes, until the chicken is browned and cooked through.

Add curry paste

Add the peppers and garlic and cook for 2 minutes

Add the coconut milk, lime zest and juice ,soy sauce and mix well.

Simmer for 20 minutes, covered with a lid, until the chicken is cooked through.

Step 9

Remove from the heat and add the cherry tomatoes, spinach and cilantro

Step 10

Stirring until the spinach has wilted.

Step 11

Season to taste
