Step by Step Method
Step 1
Melt butter over low heat in a stockpot.
Step 2
Place scallions, white and green parts, in pan and cover with a buttered sheet of wax paper and place lid on pan.
Step 3
When scallions are tender, remove wax paper and add mushrooms.
Step 4
Increase heat to medium and stir for 3 minutes.
Step 5
Sprinkle flour over mushrooms and scallions.
Step 6
Stir in flour and cook for 4 minutes to eliminate raw flour taste.
Step 7
Pour milk and stock slowly into pan while whisking to incorporate flour mixture.
Step 8
Bring just to a boil, then simmer for 10 minutes.
Step 9
Season to taste with salt and pepper to taste and serve.
