Step by Step Method

Step 1

Melt butter over low heat in a stockpot.

Step 2

Place scallions, white and green parts, in pan and cover with a buttered sheet of wax paper and place lid on pan.

Step 3

When scallions are tender, remove wax paper and add mushrooms.

Step 4

Increase heat to medium and stir for 3 minutes.

Step 5

Sprinkle flour over mushrooms and scallions.

Step 6

Stir in flour and cook for 4 minutes to eliminate raw flour taste.

Step 7

Pour milk and stock slowly into pan while whisking to incorporate flour mixture.

Step 8

Bring just to a boil, then simmer for 10 minutes.

Step 9

Season to taste with salt and pepper to taste and serve.

This fast and easy soup is delightful! We both thoroughly enjoyed this for dinner. Made as directed but with one change. I used a goodly pinch of dried thyme as I felt it needed some herbage. Will be making this again for sure. Made for Billboard Recipe Tag.
