Ingredients

The ingredients are:
  • 1 1/2 cups scallions, chopped
  • 4 cups mushrooms, approximately 1/4 inch in size
  • 1/4 cup butter
  • 3 tablespoons flour
  • 2 cups milk, warmed
  • 2 cups chicken stock, warmed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Melt butter over low heat in a stockpot.

  • Step 2: Place scallions, white and green parts, in pan and cover with a buttered sheet of wax paper and place lid on pan.

  • Step 3: When scallions are tender, remove wax paper and add mushrooms.

  • Step 4: Increase heat to medium and stir for 3 minutes.

  • Step 5: Sprinkle flour over mushrooms and scallions.

  • Step 6: Stir in flour and cook for 4 minutes to eliminate raw flour taste.

  • Step 7: Pour milk and stock slowly into pan while whisking to incorporate flour mixture.

  • Step 8: Bring just to a boil, then simmer for 10 minutes.

  • Step 9: Season to taste with salt and pepper to taste and serve.
