Step by Step Method

Step 1

Melt the butter (margarine) over medium heat and fry the onion until deep brown.

Step 2

Whisk the flour and curry powder into the onion, turn the heat to low and gradually whisk the stock into the spiced roux.

Step 3

Bring the sauce to a boil and skim away any scum.

Step 4

Stir the apple, chutney and tomato into the sauce, cover the pot and simmer it for about 45 minutes.

Step 5

Taste the sauce and adjust the salt.

Step 6

The original recipe calls to strain it but I don't, I just stir in the canned beans and simmer 10 minutes.
