"A variation of the traditional Irish soda bread. Use an Irish cheddar, such as Dubliner. This bread is always best eaten the day it is made. Great with lamb stew."

Step by Step Method

Step 1

Preheat the oven to 450°F. Coat a baking sheet with nonstick cooking spray.

Step 2

Sift the flour, baking soda and salt into a bowl.

Step 3

Make a well in the center of the dry ingredients and stir in the cheese and green onions, then add the buttermilk. Using a large spoon, mix gently and quickly until you have a nice soft dough. Add a little bit more buttermilk if necessary until the dough binds together without being too wet.

Step 4

Knead the dough very lightly on a lightly floured surface and then shape into a round that is roughly 6 inches.

Step 5

Place on the prepared baking sheet and cut a deep cross in the top.

Step 6

Bake for 15 minutes, then reduce the temperature to 400°F and bake for another 20-25 minutes or until the loaf is evenly golden and crusty. It should sound hollow when tapped on the bottom.

Step 7

Transfer the cooked soda bread to a wire rack and leave to cool for about 20 minutes.

Step 8

To serve, place the soda bread on a breadboard and cut into slices.

The crusty outside of this soda bread has the perfect chew. We absolutely loved this recipe! My daughter dipped it in marinara sauce (she says it tastes like pizza with the marinara!) and my son slathered it with butter. The directions were spot on and the cooking time was accurate for my oven. I went a little wild when I cut the line through the center of mine... almost hacked the poor loaf in half... and it still baked up like a dream. Great recipe!

We had this yummy bread to go along with our St. Patrick’s Day dinner (it was belated, but still in honor of this important Saint and the Irish). We loved the cheesiness and the scallions gave it that extra oomph. I did use a bit extra cheese and scallions. Slathered with butter made this tender bread even better. Thank you, Mikekey, for sharing. Made it for FYC and Pick Me.

Delightful! Fast and easy to bring together with a lovely rustic crust. Noticed that salt is not mentioned in the ingredient list but is in the directions. I left it out as the cheese was enough for us. Served it with lamb stew which made for an awesome lunch. Thanks for sharing Mike! Made for Billboard Recipe Tag.
