"*Admin Notes* Irish Champ is a traditional Irish dish of mashed potatoes and chopped scallions. The potatoes are boiled and mashed with butter and milk, then the scallions are added and seasoned with salt and pepper. The mixture is then served hot, usually topped with a dollop of butter. It is a simple but flavorful dish that is a staple of many Irish households and a favorite of many Irish people. *Author Notes* You can boil the potatoes but steamed keeps them firmer"

I meant to make this to go with another corned beef brisket I made, but we just had too many potatoes from other meals!! This is a great basic potato dish, and I can see it going with a nice juicy steak or chicken.....it doesn't have to go with Irish food!!

I've never made mashed potatoes with this method and they turned out very good. I like the green onion in the potatoes... it's a nice way to serve them when I'm not making gravy! Made as directed, for Billboard Tag.
