Step by Step Method

Step 1

In a cast iron skillet

Step 2

Melt the butter over medium high heat.

Step 3

Add the sliced onions and brown sugar and cook for about 30 minutes, stirring frequently.

Step 4

Cook until they are caramelized or a golden brown color.

Step 5

Add the red wine and herbs and bring to a rapid boil.

Step 6

Reduce heat to a simmer for about 10 minutes.

Step 7

Add the beef broth, Worcestershire sauce, dijon mustard, salt, pepper and balsamic vinegar and bring to a boil.

Step 8

Reduce the heat to a low simmer and cover.

Step 9

Cook covered for about 20 minutes or until thickened.

This is such a great gravy. It takes a little longer than what I usually do.....but it's worth the extra time. It has such deep flavors that go together well. I wasn't sure when to add the flour......so I added it at step 6 1/2. lol. Right after simmering the wine and before adding the broth. It worked well. I used this on leftover roast for an open-faced hot beef sandwich and it was great. Thanks for sharing this nice keeper, Dee.
