Step by Step Method
Step 1
Heat oil, add sausage and brown on all sides.
Step 2
Remove sausage from pan and set aside.
Step 3
Add paprika and potatoes and season to taste.

Cook covered 10 minutes.
Step 5
Uncover add onion, peppers, mushrooms.
Step 6
Chop sausage and stir back in pan.
Step 7
Cook until browned seasoning to taste
Step 8
Stir in chives.
Step 9
Meanwhile when potatoes are almost done heat butter in another pan.
Step 10
Fry 4 eggs to your desired doneness.
Step 11
Plate potatoes and top with eggs, 2 if your feeling generous lol.
