Ingredients

The ingredients are:
  • 2 tablespoons oil
  • 8 ounces link sausage
  • 16 ounces red potatoes,diced skin on
  • 1 cup onions, diced
  • 1/2 cup green bell pepper, diced
  • 8 ounces mushrooms sliced
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon chives, minced
  • 4 eggs
  • 1 tablespoon butter

How to Make

  • Step 1: Heat oil, add sausage and brown on all sides.

  • Step 2: Remove sausage from pan and set aside.

  • Step 3: Add paprika and potatoes and season to taste.

  • Step 4: Cook covered 10 minutes.

  • Step 5: Uncover add onion, peppers, mushrooms.

  • Step 6: Chop sausage and stir back in pan.

  • Step 7: Cook until browned seasoning to taste

  • Step 8: Stir in chives.

  • Step 9: Meanwhile when potatoes are almost done heat butter in another pan.

  • Step 10: Fry 4 eggs to your desired doneness.

  • Step 11: Plate potatoes and top with eggs, 2 if your feeling generous lol.
