"Adapted from Plum Pie who adapted it from Ina Garten, and I think it is perfect just like this so I didn't change a thing. These are so yummy and it's great because the bars freeze well, so you can grab one and go, and by the time you get to work and it's break time they are defrosted and make a great pick-me-up when your energy is down. They are pretty healthy and nutritious as well, so it's a perfect snack anytime! Make sure you keep in mind that you have to cool them for 2-3 hours and let them set before cutting them."

Step by Step Method

Step 1

Preheat the oven to 350 degrees. Grease or butter a 9x13 inch pan.

Step 2

Toss the oatmeal, almonds and coconut together in a small bowl. Using a food processor, pulse half the almonds, oats and coconut mixture.

Step 3

Toss the ground oats mixture with the other half of the oats mixture, and spread on a sheet pan.

Step 4

Bake for 10-12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl, and stir in the flaxseed.

Step 5

Reduce the oven temperature to 300 degrees.

Step 6

Place the butter, honey, brown sugar, vanilla and salt in a small saucepan, and bring to a boil over medium heat. Cook and stir for 1 minute, and take off the heat.

Step 7

Stir in peanut butter, then pour over the toasted oatmeal mixture.

Step 8

Add the chopped dried fruits, and stir well.

Step 9

Pour the mixture into the prepared pan.

Step 10

Wet your fingers or use the back of a spatula and lightly press the mixture evenly into the pan.

Step 11

Bake for 25-30 minutes, until light golden brown.

Step 12

Cool for at least 2-3 hours before cutting into squares.

I noticed your name today as Member of the Day on the main page, I checked out your recipes and found one I wanted to make and this one was it, I quickly mixed every up, I never use flax so I used fine ground peanuts instead and dried blueberries that I dried on the dehydrator, could not have been a better bar these are great, thank you!
