Yummers! Made for a great meal served as breakfast for dinner. Tasty, tasty and a real game changer for pumping up so called "boring" omelets. Made some minor changes where I added more seasoning and used some chopped scallions that I had in the fridge to save it. Also, instead of guacamole, served with fresh avocado slices and used the 6 eggs to make a Texas sized omelet. If cilantro is your thing, I can see a sprinkling over the top working really well and I will do that next time to give it a try. Thanks a bunch, Dee, for sharing.
