Step by Step Method

Step 1

Heat the olive oil in a soup pot over medium heat.

Step 2

Add the onion, garlic, and caraway seeds, and saute, stirring frequently, until the onion is translucent.

Step 3

Stir in the paprika, and cook for 1 minute while stirring continuously.

Step 4

Add the diced tomatoes (with juice), tomato puree, cold water, and vinegar. Bring the soup to a simmer,.

Step 5

Simmer for 5 minutes.

Step 6

Add the cabbage and lemon zest; continue to simmer uncovered for 30 minutes, until the cabbage is tender.

Step 7

Add the honey.

Step 8

Season the soup with the salt and pepper and the optional smoked paprika.

Thank you for sharing this wonderful cabbage soup my friend. Wow was it good. Quick and easy to make with lovely textures and a great flavor. I love the addition of honey and caraway seeds in the soup. It give a nice depth of flavor. The soup is tender, flavorful and very satisfying. We will enjoy this soup again. Daily Inspiration

We absolutely loved this soup -- it was soooo delicious. We love cabbage and I knew it would be wonderful. I scaled the caraway seed a little bit as we weren't sure how to gauge the taste. Otherwise, I made just as directed and used vegetable broth instead of water. Definitely a keeper of a recipe and one we'll make again. Served with cornbread muffins.
