Step by Step Method

Step 1

Cook potatoes in heavily salted boiling water until soft.

Step 2

Drain.

Step 3

Meanwhile when potatoes are done, heat butter and add onions.

Cook until translucent.

Step 5

Add spices to taste

Step 6

Add tomato sauce and boil for 5 minutes.

Step 7

Whisk sour cream and milk together (Libby would have added a tablespoon of flour with it)

Step 8

Simmer, don't boil for 5 minutes.

Step 9

Add peeled chopped potatoes.

Step 10

Heat until warm.

Step 11

Add parsley and stir gently.

Step 12

Season to taste.
