  • 6 cups water, boiling
  • 1 teaspoon salt
  • Sauce
  • 1/4 cup butter
  • 1 cup onion, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon oregano
  • 8 ounces tomato sauce (1 can)
  • 1 tablespoon sugar
  • 1/2 cup milk
  • 8 ounces sour cream (1 cup)
  • 1 tablespoon flour, optional
  • 1 tablespoon fresh parsley, minced

How to Make

  • Step 1: Cook potatoes in heavily salted boiling water until soft.

  • Step 2: Drain.

  • Step 3: Meanwhile when potatoes are done, heat butter and add onions.

  • Step 4: Cook until translucent.

  • Step 5: Add spices to taste

  • Step 6: Add tomato sauce and boil for 5 minutes.

  • Step 7: Whisk sour cream and milk together (Libby would have added a tablespoon of flour with it)

  • Step 8: Simmer, don't boil for 5 minutes.

  • Step 9: Add peeled chopped potatoes.

  • Step 10: Heat until warm.

  • Step 11: Add parsley and stir gently.

  • Step 12: Season to taste.
