Step 1: Cook potatoes in heavily salted boiling water until soft.
Step 2: Drain.
Step 3: Meanwhile when potatoes are done, heat butter and add onions.
Step 4: Cook until translucent.
Step 5: Add spices to taste
Step 6: Add tomato sauce and boil for 5 minutes.
Step 7: Whisk sour cream and milk together (Libby would have added a tablespoon of flour with it)
Step 8: Simmer, don't boil for 5 minutes.
Step 9: Add peeled chopped potatoes.
Step 10: Heat until warm.
Step 11: Add parsley and stir gently.
Step 12: Season to taste.
