"These are huge muffins loaded with blueberries. Years ago they were sold in a prominent department store known for its muffins. They are nice and sweet. I like to use our Maine blueberries as there is a lot of flavor, but any wild blueberry will be fine."

Step by Step Method

Step 1

Using a mixer cream the butter, sugar, and vanilla; add the two eggs and mix well.

Step 2

Combine flour, salt, and baking powder and add to above mixture alternating with the milk.

Step 3

Gently by hand add 1/2 cup blueberries and then add the other two cups of blueberries stirring gently.

Step 4

Line 12 cupcake tins with cupcake papers and spray with a cooking spray; pile the batter right up to the top of the papers using all the batter in the twelve tins; sprinkle with sugar.

Step 5

Bake at 375 degrees for 25-35 minutes.

Very good I added extra blueberries and I took the advice of a person who said if you wanted s really moist muffin to add butter and a little canola oil in muffin I used 6 tbsp butter and 2 tbsp canola oil they turned out so good was hesitant on trying it but I am glad I did. I cut sugar down to 1 cup because I don't like real sweet things.

These are some huge muffins! Chuck full of blueberries too, because I added extra. They are really moist with a crunchy top and soft inside. We had ours slathered with butter. I sprinkled on a bit of cinnamon sugar to mine. Perfect with a cup of Chai tea!

These muffins are delicious and huge! Of course we both had two anyway, they were so good! I loved how moist they were, and they were full of blueberries. These would be good with raspberries and blackberries. I will try those next when they go on sale.

My wife made these this morning and we had them with a cup o joe. Delicious moist muffins that we thought were great! We loaded them with fresh blueberries and nothing could be better!
