Honey-Ginger Glazed Carrot Sticks

"Modified from Woman's Day. Carrot sticks cooked in butter until crisp tender, then glazed with honey and tossed with snipped chives and chopped crystallized ginger."

Melt butter in large Dutch oven over medium heat.
Add grated ginger root and carrots and toss until evenly coated.
Cover pot and cook about 8-10 minutes, turning three times, or until crisp tender.
Uncover; toss with honey. Raise heat to medium-high; stir-cook until carrots are tender and glazed, 2-4 minutes.
Add remaining ingredients and gently turn to combine.
Note: Carrots can be slightly undercooked through Step 3 ahead of time and refrigerated. Reheat before adding honey and remaining ingredients.
