"A recipe by Paula Deen, the only change I made is I cooked the hens on a outdoor rotisserie, vegetable oil and one more garlic clove, I only used four hens and I really think for 6 hens you would need to increase or double the marinade - to die for!"

Step by Step Method

Step 1

Rinse hens with cold water then pat dry. Place in a large bowl.

Step 2

Put garlic and ginger in food processor and process until nearly smooth. In another bowl, combine soy sauce, honey, oil, orange juice, and zest. Add the garlic and ginger. Pour mixture over game hens, coating well. Refrigerate overnight, turning in marinade several times.

Step 3

Preheat oven to 350 degrees F.

Step 4

Place game hens in shallow roasting pan; pour marinade on top. Bake for 1 hour, basting every 15 minutes. Remove hens to serving platter. Pour cooking juices into small, heavy saucepan and boil for 4 minutes, or until sauce thickens. Pour over hens just before serving.

Step 5

These hens can also be grilled (which is how I cooked them); just remember to baste often.
