Herbed Goat Cheese-Stuffed Chicken Breasts

Step by Step Method
Step 1
Preheat oven to 350°F.
Step 2
Cut each chicken breast in half lengthwise horizontally,so you have 2 equal pieces from each breast, totalling 4.
Step 3
Put breasts in a zip lock bag and pound them out to equal thickness.
Step 4
Sprinkle salt and pepper on one side of each breast.
Step 5
In a small bowl, mix 1/4 cup mayo, Dijon, garlic, salt, pepper and grated parmesan.
Step 6
Brush 1/2 on each chicken breast on top side.
Step 7
In another bowl, mix the goat cheese, 2 tablespoons mayo, minced garlic, lemon zest, pepper, thyme and basil. Mix well.
Step 8
Put equal amounts on each chicken breast and roll each one up.
Step 9
Place in a baking dish that has been sprayed with non-stick cooking spray.
Step 10
Sprinkle with more salt and pepper.
Step 11
Brush more of the mayo/Dijon mix on top of the chicken roll-ups.
Step 12
Place in preheated 350°F oven uncovered.
Step 13
After 30 minutes, increase temp to 400°F so the chicken browns.
