Ingredients

The ingredients are:
  • 2 8 ounce chicken breasts, boneless, skinless
  • Pinch of salt and pepper
  • 1/4 cup mayo
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon grated parmesan
  • 4 ounces garlic and herb goat cheese, room temp
  • 2 tablespoons mayo
  • 1 teaspoon minced garlic
  • 1/8 teaspoon pepper
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh basil, finely chopped

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Cut each chicken breast in half lengthwise horizontally,so you have 2 equal pieces from each breast, totalling 4.

  • Step 3: Put breasts in a zip lock bag and pound them out to equal thickness.

  • Step 4: Sprinkle salt and pepper on one side of each breast.

  • Step 5: In a small bowl, mix 1/4 cup mayo, Dijon, garlic, salt, pepper and grated parmesan.

  • Step 6: Brush 1/2 on each chicken breast on top side.

  • Step 7: In another bowl, mix the goat cheese, 2 tablespoons mayo, minced garlic, lemon zest, pepper, thyme and basil. Mix well.

  • Step 8: Put equal amounts on each chicken breast and roll each one up.

  • Step 9: Place in a baking dish that has been sprayed with non-stick cooking spray.

  • Step 10: Sprinkle with more salt and pepper.

  • Step 11: Brush more of the mayo/Dijon mix on top of the chicken roll-ups.

  • Step 12: Place in preheated 350°F oven uncovered.

  • Step 13: After 30 minutes, increase temp to 400°F so the chicken browns.
