Step by Step Method
Step 1
Preheat oven to 350 degrees F. Use an oven thermometer to make sure its accurate. In a small bowl, mix the butter with the herbs, lemon zest, salt and pepper till blended well.
Step 2
Rinse and pat dry the chicken breasts. From the top part of the breast, not the pointy end, gently place your finger under the skin and loosen the membrane between the skin and the flesh. DON'T go all the way to the bottom, so it forms like a sealed pocket. Divide the herb butter into 5 parts. With a small spoon, put a portion of it in the pocket of each breast and "moosh" it down from the top with your fingers so it spreads out under the skin. Use the fifth portion to rub on the outside of the skin.
Step 3
Place breasts in a baking dish sprayed with cooking spray. Place in preheated oven and bake for 1 to 1 1/2 hours uncovered. If skin is not crispy and browned at the end of roasting time, put under broiler for a couple minutes to crisp it up.
