"Hartley's was a great restaurant In Fort Wayne, Indiana that recently closed. One of their recipes was featured in Midwest Living magazine a few years back. We enjoy it so I'd like to share it. It's a wonderful example of U.S. Heartland cooking."

Step by Step Method

Step 1

In a medium saucepan cook green beans in boiling water for 15 to 20 minutes or until crisp-tender (less if using frozen). Drain off water and set aside.

Step 2

In a large skillet, cook bacon until crisp. Drain, reserving 4 teaspoons drippings. Return bacon and the reserved drippings to skillet.

Step 3

Add brown sugar, parsley, vinegar, and shallot. Bring to boiling; reduce heat and simmer, uncovered, for 2 minutes.

Step 4

Add green beans and heat through. Enjoy!

Especially love the bacon in this. I made them with more vinegar and no sugar for our tastes (the bacon still gave it a sweetness) and they came out great.

Excellent! very tasty and exactly the flavor I expect in sweet and sour green beans. I served this with a Thai style tilapia and it was a perfect match with all the hot, sour, salty and sweet flavors going on.
