Halibut Cheeks in Orange Sauce
"Halibut cheeks are, I think, the tastiest part of the fish. They are slightly sweeter with a lovely texture that is so easy to handle. It only takes twenty minutes start to finish to make. These are nice served with rice and simple steamed veggies. Depending on the size of the cheeks 4 make a nice size serving for two. For the best results you need a heavy well seasoned skillet."

Step by Step Method
Step 1
Whisk together the orange juice, cilantro, ginger, garlic, soy, sesame oil and chili flakes,

Set aside

Heat the oilive oil in a heavy skillet over medium-high heat

Sear the cheeks on each side until golden (apprx 3 minutes per side)

Pour in the orange sauce, bring to a boil

Reduce heat, continue to cook until the sauce has thickened and the cheeks flake easily
Step 7
Serve pouring the sauce over the cheeks
