Step 1

Peel the onion and cut off the ends, slice it into four rounds.

Step 2

Mix together the oil and oregano and brush over both sides of the onion rounds.

Step 3

Sprinkle with salt and pepper and place them over direct heat of a pre-heated, medium-high grill.

Step 4

Cook for about 3 to 4 minutes, until you have a few char marks.

Step 5

Carefully turn the rounds over and cook for an additional 3 to 4 minutes.

Step 6

Vidalia Onions just hit our market and they were perfect for this recipe. They went really well with Forever Mama's Tomato & Eggs for our Sunday Brunch. I don't BBQ so pan fried - They may look a bit dark but they were perfect. This simple recipe will be made many times it is delicious.
