Step 1

Make a marinade by combining all the ingredients except the chicken in a large bowl and mixing well.

Step 2

Wash the chicken and trim any excess fat.

Step 3

Put the chicken in the bowl with the marinade, turn the pieces over to coat them, and put in the refrigerator to marinate for at least an hour.

Step 4

Prepare the charcoal or gas grill, and grill chicken pieces over medium heat until cooked through, checking with a digital thermometer.

I scaled this down to two breasts and made a slight change to this recipe only because of what I had on hand; I used white wine vinegar instead of the red. It worked perfectly!! What a tasty chicken recipe this is, the chicken is so full of flavor and moist. This will see to many repeats.

Delicious!...we loved the slight taste of lemon ...this was very easy to prepare and the chicken came out moist and tender...I cooked it in my cast iron grill...made for Billboard tag game...
