  • Black pepper, freshly ground
  • 1 tablespoon Dijon mustard (unsalted, or salted)
  • 1/2 cup red wine vinegar
  • 2 tablespoons parsley, fresh, chopped
  • 4 basil leaves, chopped
  • 1 teaspoon dried oregano
  • 1/4 cup olive oil
  • Ground sage, pinch

How to Make

  • Step 1: Make a marinade by combining all the ingredients except the chicken in a large bowl and mixing well.

  • Step 2: Wash the chicken and trim any excess fat.

  • Step 3: Put the chicken in the bowl with the marinade, turn the pieces over to coat them, and put in the refrigerator to marinate for at least an hour.

  • Step 4: Prepare the charcoal or gas grill, and grill chicken pieces over medium heat until cooked through, checking with a digital thermometer.
