Step by Step Method

Step 1

Season chicken with salt and pepper.

Step 2

In a large bowl or pan mix together the marinade ingredients (lime juice - basil) and add chicken.

Step 3

Marinade in the refrigerate for six hours or overnight.

Step 4

Grill over moderate heat for 5-10 minutes, turn and grill for another 5-10 minutes or until chicken is done.

I'm glad I read the note about key lime juice being available bottled. I also used that for the marinade. This was really great chicken and it was tender, juicy and flavorful right off the grill. I did sprinkle with salt right before I put these on the grill. A delicious summer dish!

This was easy peasy and the chicken cooks fast. The lime can still be tasted when eaten. This would be great chopped up in a salad. Thanks Ellie.
