Grilled Hot Dogs with Spicy Corn Relish
"You can grill the corn first, then add to the sautéed vegetables, if you want more of a grilled flavor. You can use canned/frozen corn, if fresh corn is out of season. I frequently forgo the bun with hamburgers and hot dogs--this is really good without the bun. I took photos of both versions for the recipe page."

Step by Step Method
Step 1
Preheat your grill to medium-high heat.
Step 2
In a medium skillet, heat olive oil over medium heat. Add the diced red onion, red bell pepper, and jalapeño pepper. Sauté for about 5 minutes until the vegetables are softened.
Step 3
Cut the corn kernels off the cob and add them to the skillet. Sauté for an additional 3-4 minutes until the corn is tender.
Step 4
Remove the skillet from heat and stir in the lime juice, salt, and pepper. Mix well to combine all the flavors.
Step 5
Brush the hot dogs with olive oil and place them on the grill. Cook for about 5-7 minutes, turning occasionally, until they are nicely charred and heated through. Remove from the grill and set aside.
Step 6
Toast the hot dog buns on the grill for a minute or two until lightly toasted.
Step 7
Place the grilled hot dogs into the toasted buns.
Step 8
Top each hot dog with a generous amount of the cooked corn relish.
Step 9
Optional: Sprinkle fresh cilantro on top.
