Step 1: Preheat your grill to medium-high heat.
Step 2: In a medium skillet, heat olive oil over medium heat. Add the diced red onion, red bell pepper, and jalapeño pepper. Sauté for about 5 minutes until the vegetables are softened.
Step 3: Cut the corn kernels off the cob and add them to the skillet. Sauté for an additional 3-4 minutes until the corn is tender.
Step 4: Remove the skillet from heat and stir in the lime juice, salt, and pepper. Mix well to combine all the flavors.
Step 5: Brush the hot dogs with olive oil and place them on the grill. Cook for about 5-7 minutes, turning occasionally, until they are nicely charred and heated through. Remove from the grill and set aside.
Step 6: Toast the hot dog buns on the grill for a minute or two until lightly toasted.
Step 7: Place the grilled hot dogs into the toasted buns.
Step 8: Top each hot dog with a generous amount of the cooked corn relish.
Step 9: Optional: Sprinkle fresh cilantro on top.
