"You can grill the corn first, then add to the sautéed vegetables, if you want more of a grilled flavor. You can use canned/frozen corn, if fresh corn is out of season. I frequently forgo the bun with hamburgers and hot dogs--this is really good without the bun. I took photos of both versions for the recipe page."

Step by Step Method

Step 1

Preheat your grill to medium-high heat.

Step 2

In a medium skillet, heat olive oil over medium heat. Add the diced red onion, red bell pepper, and jalapeño pepper. Sauté for about 5 minutes until the vegetables are softened.

Step 3

Cut the corn kernels off the cob and add them to the skillet. Sauté for an additional 3-4 minutes until the corn is tender.

Step 4

Remove the skillet from heat and stir in the lime juice, salt, and pepper. Mix well to combine all the flavors.

Step 5

Brush the hot dogs with olive oil and place them on the grill. Cook for about 5-7 minutes, turning occasionally, until they are nicely charred and heated through. Remove from the grill and set aside.

Step 6

Toast the hot dog buns on the grill for a minute or two until lightly toasted.

Step 7

Place the grilled hot dogs into the toasted buns.

Step 8

Top each hot dog with a generous amount of the cooked corn relish.

Step 9

Optional: Sprinkle fresh cilantro on top.

What an unusual hot dog...you really need to have a fork handy to eat up all the yummy relish that falls of while eating it...I only made one serving and it was for me...the hubby wanted his normal sauerkraut hot dog...I used my George Foreman Grill and frozen corn...made for "Billboard" tag game...
