Grilled Green Tomatoes with a Basil Butter

"For those of you who LOVE 'Fried Green Tomatoes,' but hates the 'FRIED' part of it ... this is a nice alternative. This recipe still uses butter; but, it is much lighter than the fried version. And, you don't necessarily need to use an outdoor grill for this recipe; but, I love the flavor the grill creates in this recipe. An indoor grill pan or even a saute pan will work just fine. This is a great side dish; but, you can also serve these over a bed a greens for a great salad."

Step by Step Method
Step 1
Basil Butter ... Add the butter, basil, lemon juice, and zest, to a small bowl and mix well to combined. Set to the side.
Step 2
Tomatoes ... Thick slice the tomatoes and season well on both sides with salt and pepper.
Step 3
Grill ... Preheat your grill (outside, or inside); grill pan, or even a saute pan to medium high heat. Make sure to spray with a non-stick spray, or brush lightly with olive oil. Add the tomatoes, and brush with a little of the basil butter. Cook until lightly golden brown and flip (3-4 minutes). Brush the other side, and grill until golden brown. Flip once more, brush with the butter and immediately transfer to a serving platter.
Step 4
Finish and ENJOY! Add any additional butter over the tomatoes, garnish with additional basil; and, enjoy - with just about any of your favorite dishes.
