Ingredients

The ingredients are:
  • 6 to 8 green tomatoes, thick sliced
  • Salt and pepper
  • Greens
  • Butter:
  • 4 tablespoons unsalted butter, softened (no margarine)
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon lemon zest
  • 4 teaspoons fresh basil, minced

How to Make

  • Step 1: Basil Butter ... Add the butter, basil, lemon juice, and zest, to a small bowl and mix well to combined. Set to the side.

  • Step 2: Tomatoes ... Thick slice the tomatoes and season well on both sides with salt and pepper.

  • Step 3: Grill ... Preheat your grill (outside, or inside); grill pan, or even a saute pan to medium high heat. Make sure to spray with a non-stick spray, or brush lightly with olive oil. Add the tomatoes, and brush with a little of the basil butter. Cook until lightly golden brown and flip (3-4 minutes). Brush the other side, and grill until golden brown. Flip once more, brush with the butter and immediately transfer to a serving platter.

  • Step 4: Finish and ENJOY! Add any additional butter over the tomatoes, garnish with additional basil; and, enjoy - with just about any of your favorite dishes.
