"Very tasty recipe made with ingredients that are easily available.. I use my electric griddle and do both sides at the same time. You can. BBQ 3-4min each side or even pan fry with a spray of Olive Oil on the pan. When you slice the eggplant take a thin slice off each side to remove the outside skin. Step by Step Method
Step 1
In a small bowl whisk the first 7 ingredients together
Step 2
Brush 2 tbsp of the juice mixture over both sides of the slices
Step 3
Grill the eggplant 3-4 minutes each side . Transfer Eggplant to serving plates.

While the eggplant is cooking stir together the honey, pepper flakes and remaining juice mixture
Step 5
Drizzle Honey mixture over the cooked slices and serve
