Step by Step Method

Step 1

Place pork chops on a baking sheet or cutting board.

Step 2

Stir ancho chili powder, oregano, salt and pepper in a small bowl.

Step 3

Rub the pork chops with the spice mixture. Set aside.

Step 4

Preheat the grill over medium-high heat. Brush the grill or grill pan with oil or spray with Pam.

Step 5

Add pork chops to the grill and cook for 7 to 8 minutes, then flip and cook on the other side for another 6 to 7 minutes.

Step 6

Meat should be at 145 to 150 F when checked with a meat thermometer.

Step 7

Transfer pork chops to a chopping board and cover, let rest for about 5 minutes, and then thinly slice the meat into 1/4-inch slices.

We loved the spice on these chops...I used boneless chops because that's what I had on hand...they came out perfect...tender and moist...these cooked up really quick so make sure your side are ready to go...I serve them with a microwave broccoli and a tasty campfire potato...made for "Only the Lonely" tag game...
