Step 1: Place pork chops on a baking sheet or cutting board.
Step 2: Stir ancho chili powder, oregano, salt and pepper in a small bowl.
Step 3: Rub the pork chops with the spice mixture. Set aside.
Step 4: Preheat the grill over medium-high heat. Brush the grill or grill pan with oil or spray with Pam.
Step 5: Add pork chops to the grill and cook for 7 to 8 minutes, then flip and cook on the other side for another 6 to 7 minutes.
Step 6: Meat should be at 145 to 150 F when checked with a meat thermometer.
Step 7: Transfer pork chops to a chopping board and cover, let rest for about 5 minutes, and then thinly slice the meat into 1/4-inch slices.
