Ingredients

The ingredients are:
  • 16 ounces pork loin chops (two 8-ounce bone chops, 1-inch thick)
  • 1 tablespoon ancho chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt, or more to taste
  • 1 teaspoon freshly cracked black pepper
  • Vegetable oil (or Pam grill spray to grease grill)

How to Make

  • Step 1: Place pork chops on a baking sheet or cutting board.

  • Step 2: Stir ancho chili powder, oregano, salt and pepper in a small bowl.

  • Step 3: Rub the pork chops with the spice mixture. Set aside.

  • Step 4: Preheat the grill over medium-high heat. Brush the grill or grill pan with oil or spray with Pam.

  • Step 5: Add pork chops to the grill and cook for 7 to 8 minutes, then flip and cook on the other side for another 6 to 7 minutes.

  • Step 6: Meat should be at 145 to 150 F when checked with a meat thermometer.

  • Step 7: Transfer pork chops to a chopping board and cover, let rest for about 5 minutes, and then thinly slice the meat into 1/4-inch slices.
