Step by Step Method
Step 1
Heat a grill pan or grill over high. Coat the pan or grill with cooking spray. Place the bok choy halves, cut side down, on the pan. Cook 2 minutes per side, until both sides are marked and lightly charred. Remove from the pan.
Step 2
Stir together the buttermilk, blue cheese crumbles, vinegar, sugar, and pepper in a bowl.
Step 3
Place the bok choy halves on a serving platter. Top evenly with buttermilk dressing, and sprinkle evenly with tomatoes and fried onions.
