Step 1

Toss together the potatoes, lemon juice, oils, spices and garlic in a 9 x 13 pan. Add the chicken broth. Bake uncovered in preheated oven for about 45 to 60 minutes at 400 degrees. Stir every 20 minutes adding more broth or water if necessary to prevent sticking.

Step 2

Be very careful not to burn the potatoes during the last 20 minutes. During the final 20 minutes allow the water to evaporate until only the oil is left. Garnish with fresh parsley and serve.

Bergy (RIP" Forever in our Kitchen)

The amounts of lemon, oregano and garlic are in perfect balance. Loved these potatoes. I did them in my Actifry and they were very very good. Thanks Puggs for a keeper

I am so far behind on my reviews that I thought I better get on here and do them! These potatoes are delicious. I let them bake longer to get them golden brown all over. The herbs really add to the flavor and the ingredients go so well together. Another winner recipe for us to keep!
