Step by Step Method
Step 1
Combine herbs and spices in small bowl.
Step 2
Rub both sides of each steak with dry rub.
Step 3
Heat olive oil in skillet over medium heat.
Step 4
When skillet is hot, add steaks and cook to your desired doneness. 5-8 minutes per side should put you in the ballpark of medium but will really depend on how thick your steaks are, how hot your burners run and what type of skillet you use.
Step 5
When steaks are done, remove from skillet to serving plates. Squirt each steak with a drizzle of lemon juice and top with feta and olives.
Step 6
Let steaks rest a few minutes for juices to settle and cheese to warm slightly before serving.
