"This is hubby's favorite pancake recipe, and my second favorite after my country pancakes. Adapted from Dianne03 at fooddotcom, it was her granny's."

Step by Step Method
Step 1
Whisk flour, baking powder, salt and sugar in a large bowl. Add milk, egg, melted butter and vanilla, whisking until smooth. Add club soda to reach desired consistency.
Step 2
Let batter sit for 5 minutes, then add more club soda if needed.
Step 3
Meanwhile, preheat lightly oiled griddle over medium high heat.
Step 4
Pour about 1/4 cup for each pancake, then sprinkle pecans on top. Once large bubbles form and begin to pop, turn pancakes and cook until golden brown on other side.
Step 5
Serve immediately or keep on oven-proof platter in oven at 170 degrees.
Step 6
Original recipe called for brushing additional melted butter on each pancake as they came off the griddle.
