The ingredients are:
  • 1 1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 tablespoon malt
  • 1 cup milk
  • 1 large egg
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup club soda, plus
  • 2 tablespoons club soda
  • 1/4 cup chopped pecans

How to Make

  • Step 1: Whisk flour, baking powder, salt and sugar in a large bowl. Add milk, egg, melted butter and vanilla, whisking until smooth. Add club soda to reach desired consistency.

  • Step 2: Let batter sit for 5 minutes, then add more club soda if needed.

  • Step 3: Meanwhile, preheat lightly oiled griddle over medium high heat.

  • Step 4: Pour about 1/4 cup for each pancake, then sprinkle pecans on top. Once large bubbles form and begin to pop, turn pancakes and cook until golden brown on other side.

  • Step 5: Serve immediately or keep on oven-proof platter in oven at 170 degrees.

  • Step 6: Original recipe called for brushing additional melted butter on each pancake as they came off the griddle.
