Glazed Carrots With Irish Whiskey & Ginger

Step 1

Combine sugar, pepper and salt. Set aside.

Step 2

Heat the oil and half of the butter in a large skillet. Add carrots in a single layer and sprinkle with sugar mixture. Cook over medium-high heat for 3 minutes, then start turning the slices with tongs and reduce heat if necessary. When slightly browned on both sides, transfer to a plate.

Step 3

Clean skillet with paper towels. Add the ginger and cook over medium-high heat for 1-2 minutes, until golden. Add to the carrots on the plate.

Step 4

Add remaining butter, the whiskey and broth. Bring to boil, then simmer 3 minutes or until syrupy.

Step 5

Return carrots and ginger to pan, and swirl with the syrup for 1 minute.

Step 6

Serve immediately.

I had some Tullamore Dew Irish whiskey to use up so I decided to make this recipe for our St Patrick's Day meal. Great choice for me and the family!

OMG............ so very delicious! Except for using honey whiskey (sorry Mikekey). everything else was as per recipe. I love, love, loved these! As did the whole family! DS loved them and would like them again..... ssshhh I am not telling him it was his whiskey I used! ;-) Ahh well he will find out when the bottle is empty! This is a must try recipe for anypne thinking about making this...... You wont be disappointed! This side dish will go with just about anything, and will surely please everyone!

These are amazing!!!! I halved the recipe and regret doing so, I would of loved just a plateful of these. You do have to keep an eye on the carrots while cooking with the sugar so they do not burn. A keeper recipe Mikekey.

I have made these several times now and my review never wavers. We love these! There is a nice caramelized flavor and the browning tends to tone down the heat from the julienned ginger. This last time I made them with a mix of spring carrots and purple carrots for color and interest but the flavor is the same.
