Ginger Butternut Squash Casserole

Step 1

Steam the squash over water for about 20 minutes or until tender

Step 2

While still warm process the squash in a food processor with the ginger and butter, brown sugar until smooth, taste, season with salt and pepper.

Step 3

Place in a lightly greased casserole dish, bake in 350 oven covered for 20 minutes and serve

We loved this with our Easter ham and all the fixins! The addition of the ginger really spiked up the flavor of the squash and it was so enjoyed by us all. I am adding this to our favorites for Easter and we will have it throughout the year too. It's just too good not to!

A great addition to our Easter table. We loved the taste of the ginger with the squash. I can't see having it any other way since my family emptied the bowl!
