Step by Step Method
Step 1
Preheat oven to 350°F.
Step 2
Toss garlic with oil in baking pan.
Step 3
Cover with foil; bake 30 minutes.
Step 4
Uncover; bake until garlic is tender, about 15 minutes.
Step 5
Cool; peel and chop.
Step 6
Cook potatoes in large pot of boiling salted water until tender, about 25 minutes. Drain.
Step 7
Transfer potatoes to large bowl.
Step 8
Add garlic and remaining ingredients.
Step 9
Using electric mixer, beat mixture until smooth.
Step 10
Season to taste with salt and pepper.
Step 11
(Can be prepared 2 hours ahead. Cover; let stand at room temperature. Rewarm, stirring constantly, before serving.)
