The ingredients are:
  • 36 cloves garlic
  • 1/3 cup olive oil
  • 5 pounds russet potatoes (1-inch pieces)
  • 2 cups grated cheddar cheese (grated white cheddar)
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup unsalted butter (room temperature, 1/2 stick)
  • 1 1/2 teaspoons chipotle pepper, minced

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Toss garlic with oil in baking pan.

  • Step 3: Cover with foil; bake 30 minutes.

  • Step 4: Uncover; bake until garlic is tender, about 15 minutes.

  • Step 5: Cool; peel and chop.

  • Step 6: Cook potatoes in large pot of boiling salted water until tender, about 25 minutes. Drain.

  • Step 7: Transfer potatoes to large bowl.

  • Step 8: Add garlic and remaining ingredients.

  • Step 9: Using electric mixer, beat mixture until smooth.

  • Step 10: Season to taste with salt and pepper.

  • Step 11: (Can be prepared 2 hours ahead. Cover; let stand at room temperature. Rewarm, stirring constantly, before serving.)
