Step 1: Preheat oven to 350°F.
Step 2: Toss garlic with oil in baking pan.
Step 3: Cover with foil; bake 30 minutes.
Step 4: Uncover; bake until garlic is tender, about 15 minutes.
Step 5: Cool; peel and chop.
Step 6: Cook potatoes in large pot of boiling salted water until tender, about 25 minutes. Drain.
Step 7: Transfer potatoes to large bowl.
Step 8: Add garlic and remaining ingredients.
Step 9: Using electric mixer, beat mixture until smooth.
Step 10: Season to taste with salt and pepper.
Step 11: (Can be prepared 2 hours ahead. Cover; let stand at room temperature. Rewarm, stirring constantly, before serving.)
