Step by Step Method

Step 1

Cut 4 large rectangles of heavy duty aluminum foil.

Step 2

Combine first 5 ingredients (this can optionally be done in a blender).

Step 3

Brush the 4 large rectangles of aluminum foil with olive oil. Place chicken in center; brush with lemon/garlic mixture, then sprinkle with salt, pepper, then lightly dust with garlic powder. Place/tuck 1 pat (1 tablespoon) butter under the skin of each breast.

Step 4

Place a slice of onion and a sprig of parsley over each. Fold up aluminum into a loose, square packet and crimp edges tightly to seal well. Place packets in a shallow baking dish.

Step 5

Grill until cooked through (cooking time will depend on the size of each chicken piece). Or you can oven bake 350 degrees for 50 minutes or until your chicken is done.

This is a recipe to be repeated. The flavour is mellow & the chicken comes out tender moist. I used skinless, boneless thighs. 30 minutes in 350 oven. The onion lends flavour to the chicken and has an almost sweet taste. I used regular parsley. This recipe was a big hit.

I made this for dinner tonight and cooked it on the bbq because I didn't want to heat up the house by using the oven. I love the tartness of the lemon with the chicken. Delicious.

Made this as directed except for opening up the packet and broiling the chicken for a few minutes at the end of the cook time just to crisp the skin. Will make this again, thanks for sharing. Made for the Recipebook Tag game.
