Step by Step Method

For Vinaigrette


Step 1

Puree all items together until smooth and emulsified.

Step 2

Transfer to a cruet with a stopper.

For Tuna Salad


Step 3

Combine the tuna, fennel, apple, mayonnaise, vinaigrette, lemon juice, fennel seeds, coriander, zest, and salt, and toss well.

Step 4

Line each roll with a lettuce leaf.

Step 5

Spoon 1/2 cup tuna salad onto each sandwich.

Step 6

Serve immediately.

Yummy! Very light and refreshing sandwich. Just what I needed for this almost 90°F day. I love the extra crunch from the apple and fennel. I used a little less mayo and a little more of the parsley Vinaigrette, just because I'm watching my cholesterol. Not because it needed any changes. For the bread I use a potato roll that was warm when I bought it at the bakery. It was difficult not to eat it on the way home.
