"I'm too cheap to buy these, so am making my own! 30 minutes of the "cook" time is actually "freeze" time."

Step by Step Method

Step 1

Line 8 inch square pan with foil, leave some hanging over the edges.

Step 2

Chop dates in food processor until they form a ball. Transfer to bowl.

Step 3

In a small saucepan, melt peanut butter, honey and vanilla until combined. Add to dates and mix together.

Step 4

Fold in the nuts, oats and seeds.

Step 5

Press mixture into prepared pan and freeze about 1/2 hour. Cut into 12 slices.

Step 6

You can wrap each one individually and store in refrigerator. Or keep some in freezer for later.
