Ingredients

The ingredients are:
  • 1 cup dates, pitted
  • 1/4 cup peanut butter (or other nut butter)
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup almonds, roasted or mixed nuts (unsalted)
  • 1/2 cup rolled oats
  • 3/4 cup dried fruit (cranberries, raisins, cut up apricots, etc)
  • 1/4 cup pumpkin or sunflower seeds, (unsalted)

How to Make

  • Step 1: Line 8 inch square pan with foil, leave some hanging over the edges.

  • Step 2: Chop dates in food processor until they form a ball. Transfer to bowl.

  • Step 3: In a small saucepan, melt peanut butter, honey and vanilla until combined. Add to dates and mix together.

  • Step 4: Fold in the nuts, oats and seeds.

  • Step 5: Press mixture into prepared pan and freeze about 1/2 hour. Cut into 12 slices.

  • Step 6: You can wrap each one individually and store in refrigerator. Or keep some in freezer for later.
