"This is a recipe I put together when I had a bunch of my girlfriends coming over to our summer camp for a weekend. Everyone had to bring something different to drink to share with everyone. This was a hit and I make it regularly now. I let the mixture sit out for a couple of minutes beforehand to make it easier to scoop out."

Step by Step Method
Step 1
Place the pineapple in the food processor.
Step 2
In a bowl, mix together the coconut milk, sugar and coconut extract until sugar is completely dissolved.
Step 3
With food processor running, pour the coconut milk mixture in the spout and process a few seconds, until mixture starts to thicken.
Step 4
Pour into a plastic container, cover and freeze overnight.
Step 5
To make drink: Scoop out 1 cup of the mixture.
Step 6
Place in a blender with 1/2 cup milk and liquefy.
Step 7
Pour in a glass and add 1 ounce coconut rum.
